Nutrition and HIV

Trying to get people land, then plowing, then manure, then fencing,
then seed, then irrigation.
Not easy when you don't have a coin. Our hospital is prepared to
pay for seed. My embassy (US) doesn't even have the agency that usually helps with agriculture (A.I.D.)
People eat Leguscha, which seems like a wild okra.
They eat the leaves, unfortunately, for me they overcook it too glue.
Any ideas how to get maize available for niacin with lime, or any
other alkalizing method. As in Mexico's Masa Harina?
