Micronutrients content of Leguscha

According to Ogle and Grivetti (1985), Leguscha is the common name for
Chorchorus spp (Corchorus confuscus, C. tridfens, or C. trilocularis)

Per 100g edible portion Chorchorus spp has 1.2mg Niacin compared to 1.8mg for maize meal.

Per 100g fresh, wet plant material Chorchorus spp has Calcium 340.8mg
iron 42.7 zinc 1.60

How do these compare with nutritional requirements for PLWA?
Does anyone know of other uncultivated foods which are common in diets? If so, you can reply to mbarany@vt.edu, and I will search for nutritional
information.

They eat the leaves, unfortunately, for me they overcook it too glue.
Any ideas how to get maize available for niacin with lime, or any
other alkalizing method. As in Mexico's Masa Harina?
