[pronut-hiv] Likuni Phala (2)

Likuni Phala recipe

I keep meaning to answer this request here is what I know about it from
being in Malawi since 1997, living very close to Likuni, and eating
Likuni Phala many times!
Likuni Phala used to be made at a hospital nutritional rehabilitation
unit,then over the years households were taught how to grow and make the
mixture
themselves. In the past few years a couple of food processers have makde
the product for sale in our few supermarkets. The packet I just bought
even
pre-cooks the ingredients so preparation time is very quick.
Household recipe:
----Ingredients----
* Soy Beans - boil, remove husks, cool & dry. (this process is done as
people feel that the beans smell and taste bad without processing, soy
also
has some inhibitors in it that this process is supposed to reduce. I
just use plain soy beans uncooked and make sure that I eat a balanced
diet!)
* Maize - dried local maize (there are people working on other starch
bases such as cassava)
* The food processing company adds micronutrients, salt, sugar and milk.
----Process----
* Grind 1 cup cooked dried soybeans and 4 cups dried maize kernels into
a flour.
----Cooking----
* Use about 1.5 cups water to .5 cups flour mixture, bring to a boil for
about 15 minutes. Add fruit, milk, groundnut flour or other
nutrients/flavours to taste.
----Nutritional info-----
According to the package on Rab's Sunshine Likuni Phala (which remember
contains micronutrients, salt, sugar and milk) contains per 100 gms:

Vit A 1664 IU
Thiamine 0.128 mg
Riboflavin 0.448 mg
Niacin 4.8 mg
Folate 60 micg
Vit C 48 mg
Vit B12 1.2 micg

Zinc 5 mg
