I was marginally involved with the development of the original Likuni Phala
in the early 1990s, and helped the Min of Health in Malawi to write a small
booklet called 'Likuni Phala' MOH 1992. This gives other recipes for the
phala (porridge) using groundnuts and beans. At that time no micronutrients,
milk, sugar or salt were added. The proportions of cereals and legumes
suggested in the booklet might be useful to you. Personally I should think
it better not to add salt if the phala is meant for young children.
You could try getting hold of the booklet from Theresa Banda at the Ministry
of Health in Lilongwe mwenechos@malawi.net. She could probably tell you
better how to adapt the soy/maize recipe. If this fails, email me and I can
copy the recipes out of the booklet.
