Sampling methodology and sample size would largely depend on the objectives of the survey and partly on resoruces - both human and financial resources avaialble. Perhaps you could team up with a good statistician and epidemiologist to decide on the best approach.
As well, there are severaly diet assessments methods which can be cheaper and can cover larger sample and expensive and cover small large sample. Again, the nethod you would select would depend on the objectives.
A text book - Principles of nutritional assessemet by Rosalind Gibson - second edition 2005, published by oxfor university press would be an excellent reference for you if you can get hold of it. It discusses methods and all other aspects in great detail
So once you have obtained the food intake data of the selected sample or the population groups, to analyse it for nutrient intake should not be too difficult if you have the appropriate food composition tables. Does Zambia have theirs? What nutrients would you be interested in?
